😎 MIGAS BREAKFAST BOWL - on a recent trip to Austin, my taste buds had their first opportunity to try a MIGAS BREAKFAST TACO & needless to say...mind blown! How had I never tried or heard of this delectable goodness until my 60th year of life!? . Upon further conversations while we were enjoying those breakfast tacos with some of the amazing peeps I was traveling with (hey Hugo & Alex 👋🏻)I learned so much more about migas ~ it is often a family staple given that it uses ingredients you most likely already have on hand, can be made in minutes & of course is delicious! . Since the migas taco I had in Austin had potatoes included, the rendition I’ve been enjoying at home since that trip also includes some lil’ golden cubes of the humble spud & a kiss of chipotle chili powder. . Traditionally, migas is served with a side of refried beans, so since I’m currently obsessed with @sietefoods Charro beans, that’s what I went with. I also top the whole dish off with the Traditional Botana Sauce Siete also makes...it’s the chef’s kiss! .
