Pumpkin chocolate chip muffins were the very FIRST paleo muffin ever to get a Paleo make over here on the blog, and that was over three years ago! I had just starting experimenting with Otto’s Cassava Flour and learning my way around the whole “gluten free baking” thing. I’ve come a VERY long way in understanding how to adapt a standard recipe to a tasty Paleo version. I was going to take it off the blog, but just don’t have the heart to, it has it’s place here. It was a key part of the journey.

Last week I had a thought that I should give this family favorite another try and come up with a “version 2.0″ that was simpler to make, adapt it so it uses only one flour and frankly make it taste more like the original. Oh, and take a few nicer pics…those have come a long way as well!! Thrilled that I nailed it on the first try! This happens ever so often and couldn’t be happier it was this muffin. Base on family reviews here, I’m pretty sure we’ll be making these year round and not just in the Fall, as we hope you will as well!

Ingredients

Directions

  1. Preheat oven to 385°. Line muffin tin with parchment liners, set aside.
  2. In a medium bowl, whisk cassava flour, maple sugar, pumpkin pie spice, baking soda, salt and baking powder together in a mixing bowl, toss chocolate chips set aside.
  3. In a small bowl, whisk eggs, vanilla, ghee, pumpkin puree together until well combined, and eggs are all incorporated.
  4. Add wet ingredients to the dry ingredients and stir to combine with a rubber spatula
  5. Scoop batter into lined muffin tins, you should get 8-9 depending on how full you like your muffins.
  6. Bake for 22-24 minutes or until toothpick inserted comes out clean.
  7. Remove from oven, let sit for 5 minutes in muffin tin then tip them over on their sides to finish cooling.

  1. Can we subsitute the eggs?

    • Hi Judy! I’ve not tested it with an egg sub, but if I were going to I’d probably try a couple flax eggs made with golden flax meal. I know the recipe calls for 3 eggs, but I’m not sure how well 3 flax eggs would hold up? You could even experiment with a half recipe and use just 1 flax egg…that way there aren’t as many ingredients at risk. Please let me know if you give it a try. ~Michelle

  2. Can the whole eggs be subbed with just egg whites? If so approximate volume/weight? Thanks! 🙂

    • Hi Theresa,
      That is a great question and a sub that I’ve not tried. If you were going with just egg whites, you may consider whipping them first and folding them into the batter so that they can provide as much lift as possible to the muffin as it bakes. I’m not sure what the volume/weight equivalent might be though, sorry about that. You might consider testing it out with just a half recipe so there aren’t as many ingredients at risk.   3. Would you use coconut oil as a sub for the ghee? or something else?

    • Hi Meg! So sorry we didn’t see your comment before now!! Yes, using coconut oil as a sub for the ghee should work here. That has been tested on a couple other of our muffin recipes with great success, but not on this one specifically. If you give it a try, we’d love to hear how it goes. ~Michelle

  4. Can I use coconut sugar instead maple sugar?

    • Hi Alejandra…coconut sugar could work, although I haven’t tested it so I can’t say for sure. Sometimes this makes for a dryer muffin batter, so a little splash of coconut milk might be necessary…maybe?? If you give it a try, please let us know how it goes 😊

    These tasted wonderful gone before I could get the second batch in the oven I had to swap coconut oily for ghee, and mix some honey with maple syrup for my sweetener. Baked perfectly moist and fluffy! Thank you!
