green apple pecan chia seed breakfast pudding

This is a great breakfast when you just maybe want something a bit brighter to eat! Don’t get me wrong, I LOVE eggs and bacon and veggies quite a bit for breakfast, or for any meal actually! But  you just need something a bit lighter on the palette in the morning!

I’ve been making a version of this breakfast pudding for a while now, but it is sweetened with maple syrup or honey, I simply omitted it and it’s actually really good this way too.

Obviously you can sub out the apple for another fruit, it’s a pretty versatile chia pudding. Have a go with whatever your palette might be craving!

Ingredients:
1 can full fat coconut milk
¼ c unsweetened almond milk
¼ c chia seeds
½ t cinnamon
½ t vanilla
¼ t nutmeg or freshly grated (optional)
pinch of

Topping:
¼ of a large green apple or ½ of a small, peeled and diced
¼ t cinnamon
shredded coconut (optional)
hemp seed hearts (optional)

Instructions:

  • The night before, combine all ingredients together and whisk well to combine. Chia seed are notorious for sticking together (kind of like Hobbits…you know, Frodo & Sam or Mary & Pippin, ahem, well if you’re not LOTR fans, you just won’t get that..anyways)…cover and place in refrigerator.
  • In the morning, whisk again and add more almond milk to get it to the consistency you like. You should have about 2 cups. Spoon about ½ c into bowl you’ll be eating from.
  • For topping, simply toss diced green apple & chopped pecans with cinnamon in a separate bowl until they have that “dusted” look and spoon on top of chia pudding.
  • Add optional toppings if desired…but come on, who doesn’t want a little hemp to begin your day!
