coconut lime chia seed breakfast parfait
The sun is finally warming things up here so it seems much of my mind turns to all things tropical! Even though we are far from a tropical location living in the heart of northern Utah, my soul longs to be on warm beach most of the time!! Go grab some coconut milk and limes…chop up some yummy mango and kiwi, and you’re all set! You’ll be feeling like you’re on a beach somewhere with all the sunny flavors going on in your mouth!! Plus I guarantee your face will be smiling! Enjoy!!!!!
1 can full fat coconut milk
¼ c unsweetened almond milk
¼c + 1 t chia seeds
zest and juice of 1-2 limes, just depends on how tangy you like it!!
1 T honey (optional)
Pinch of Redmond Real Salt
Fruit of choice, diced
handful of macadamia nuts, roughly chopped
sprinkle of unsweetened coconut
- The night before, combine all ingredients together and whisk well to combine, cover and place in refrigerator.
- In the morning, whisk to distribute chia seeds evenly and check consistency and flavor, add more lime juice if you’d like.
- Dice fruit…we prefer mango and kiwi – but seriously pick whatever fruit you’d like to enjoy with this!
- Spoon about ½ c chia seed mixture into dish, top with a couple tablespoons of fruit and/or nuts & coconut, then repeat with more chia seed mixture and fruit/nut/coconut combo.
