That’s the vibe here. I use Maizly corn milk as the liquid base which adds a subtle sweetness, and Primal Palate Apple Pie Spice for that warm, layered fall flavor. And the dried apples? Lehi Mills unbleached bread flour (a local brand here that is literally a mile from my home) is my go-to here for structure and a soft crumb. Granulated white sugar, baking soda, Primal Palate Apple Pie Spice, and a pinch of am.Niccoli vanilla baking salt round out the dry team. Then the good stuff: Bare Snacks dried apple chips and organic dried cranberries stirred right into the flour so they get coated and distributed evenly. The wet side is Maizly corn milk with a splash of lemon juice (this creates a quick homemade buttermilk that gives the cake real lift), two eggs, melted butter, and vanilla extract.
For the Caramel Apple Frosting
This is where the magic happens. Powdered sugar, a little more Maizly corn milk, Siete Dulce de Leche dairy-free caramel, a pinch more apple pie spice, and that same vanilla baking salt whisked together until smooth and spreadable. If you want it a little thicker, add less milk. If you want it to run beautifully over the edges of the cake, make it a little thinner. No wrong answer here, make it like you like and enjoy!
How to Make It
Preheat your oven to 375°F degrees and grease a 9×13 pan or line it with parchment. Whisk all the dry ingredients together in a large bowl, and stir in the dried apples and cranberries. In a separate bowl combine all the wet ingredients. Pour the wet into the dry and stir just until combined. Don’t overmix, a few streaks are fine and the batter will be thicker than you expect. That’s exactly right.
Spread into the prepared pan and bake 22 to 25 minutes until a toothpick comes out clean. Let it cool completely before frosting, the wait is worth it, I promise! Mix together the frosting ingredients, spread/pour over the cooled cake, and if you want to get fancy, scatter a few extra dried apple pieces on top for garnish. But really, add the extra garnish up on top since this will let your taste buds know what is also on the inside of the cake. Done!
Tips for the Best Cran-Apple Snack Cake
Don’t overmix the batter. An important tip for a tender snack cake. Once the wet and dry ingredients come together, stop stirring. Overmixing develops the gluten and gives you a dense, tough cake instead of a soft one.
Cool completely before frosting. I know it’s tempting to pour the frosting on while the cake is still warm, but it will just melt right off and pool at the bottom of the pan. Give it the time it needs and the frosting will set into that beautiful glossy layer. In the Fall season, my back porch is often cool enough to set the baked caked outside (loosely covered with a tea towel) on my patio table and most certainly in the Winter!
Stir the dried fruit into the dry ingredients first. Just make sure you’re using a blend-style GF flour rather than a single-ingredient flour like almond or coconut, which would require completely different ratios.

This cran-apple snack cake keeps beautifully covered at room temperature for 2 to 3 days. The dried fruit actually helps keep it moist longer than you’d expect. If you want to keep it a little longer, pop it in the refrigerator for up to 5 days and let individual slices come to room temperature before eating.
