A tasty one skillet fruit crisp that is an edible and oh so crispy version of the popular beverage, a cherry limeade! The crisp up on top is made using my WAFFLE CONE GRANOLA and a only couple other ingredients. A one skillet (or baking dish) treat that is truly so scrumptious!
The amount of lime juice can be dailed up or down depending on your personal preference. Since the cherry limeade beverage is also a personal choice on how “lime forward” you like it! by op it with your favorite ice cream or whipped cream
Skillet Cherry Limeade Fruit Crisp

1½ cup Waffle Cone Granola
½ cup Otto’s Cassava Flour
Pinch of vanilla baking salt, can sub standard salt
3-4 tbsp butter, can sub ghee as needed

4 cups cherries, frozen
½ cup maple sugar, can sub standard sugar
3 tbsp Otto’s cassava flour
¼ tsp vanilla baking salt
zest of 1 lime
juice of 2 limes
2 tbsp butter, can sub ghee as needed

1 cup vanilla ice cream

Directions
- Preheat your oven to 350°.
- Crush waffle cone granola into approximately 1” pieces. In a small mixing bowl add cassava flour, butter (or ghee) and salt. Using your fingers, incorporate the butter into the dry flour/salt mixture until you have a crumbly mixture. Add the waffle cone granola and toss to coat with the flour/butter mixture, set aside.
- Add cherries, sugar, cassava flour, salt, lime zest and juice to a 10” cast iron pan* – toss ingredients together until fruit is evenly coated, spread out evenly in the bottom of the pan.
- Sprinkle crisp/topping evenly over the top and dot with butter.
- Place in the oven and bake for 35-40 minutes or until the fruit is bubbly and the topping is golden brown.
- Remove from the oven and allow to set for a few minutes–this is the time to get that ice cream out of the freezer to soften up a bit!
- When ready to serve, top with ice cream and a little bit of lime zest while still warm or if you’re like me enjoy it after it cooled off a bit and serve the ice cream on the side! You can also serve this by spooning out onto individual plates then topping with ice cream.
- Store any leftovers in the fridge for up to 4 days.
