
How could I NOT post about a fun way to enjoy this new WAFFLE CONE GRANOLA in ice cream?! As well as serve it in my Paleo WAFFLE CONE! You can use your favorite ice cream brand or homemade flavor. I went with straight up vanilla, because I wanted the granola to shine.
Waffle Cone Granola ice Cream

4 – 5 cups Vanilla Ice Cream, my home made w/out the cinnamon swirl or your favorite brand
1 cup Waffle Cone Granola, broken apart into bite sized pieces
3 – 4 whole Paleo Waffle Cones
Rainbow Sprinkles, if desired
Directions
- Prepare a standard loaf pan by lining with parchment paper, using small binder clips to hold parchment in place as needed. You may also want to prepare a location in your freezer to accommodate the loaf pan once the ice cream is mixed together, since it will need to be put in the freezer immediately.
- Remove your ice cream from the freezer and allow it to soften a bit so it’s easier to incorporate the granola.
- While the ice cream softens, place the granola in a large mixing bowl* and using a small cup or other flat bottomed container, carefully crush the clusters into bit sized pieces by pressing the glass down. Once you have a cup worth of waffle cone granola pieces, set aside.
- In a large mixing bowl, add softened ice cream and use a wooden spoon to push it around the bowl so soften a bit further.
- Quickly add the granola pieces and stir to fully incorporate then spoon into the prepared loaf pan and press into place. Add additional granola pieces to the top if desired then place in the freezer. Let it set for a minimum of 4-5 hours, optimally overnight.
- When ready to serve, you know the drill…remove from the freezer to allow it to soften a bit, then scoop into waffle cones, add a few sprinkles if you want and enjoy!
- Return any unused ice cream to the freezer and enjoy within 2-3 weeks.
Notes
- Alternatively you could put the granola in a zipper bag and smash it with a rolling pin, but I feel like that might make the pieces too small, decide what works best for you.
