When one has WAFFLE CONE BUTTER why not make homemade waffles for Brunch or even Brinner! Introducing, Homestyle Waffle Cone Butter Waffles! An unexpected new recipe that I woke up one Sunday morning thinking about and had to make a reality! That waffle cone butter…yep, made with my  WAFFLE CONE GRANOLA made in collaboration with Nana Joes Granola. You’re gonna LOVE this one! Feel free to top with fruit and of course some waffle cone granola! I get 3-4 large round waffles, but depending on your waffle iron, your amount will vary.

I initially whipped up my first batch of WAFFLE CONE BUTTER without any thought about how versatile it would be. I didn’t realize it would lead to more tastiness and that’s a beautiful thing! Take these HOMESTYLE “waffle cone butter” WAFFLES for example! Could waffles get any tastier than to taste like a waffle cone?

You can also make a double batch, enjoy half of them, then freeze the rest for when you’re craving waffles! They warm up great in an air fryer or even a toaster oven. I’ve had a Cuisinart Multi-function air fryer for over six years and I LOVE it! I don’t let many things take up real estate on my kitchen counters, but I do for this!

waffles that taste like a “waffle cone” – life is grand!

Ingredients

  • 1 1/4 cups Whole Milk, can sub dairy free as needed

  • 1 Tbsp Lemon Juice

  • 1 whole Egg, room temperature

  • 1/4 cup Waffle Cone Butter

  • 1/4 cup Pure Maple Syrup, room temperature

  • 1/4 cup Avocado Oil

  • 2 tsp Vanilla Extract

  • 1 1/2 tsp Grain-Free Baking Powder – Otto’s Naturals

  • 1 1/2 tsp Vanilla Baking SALT – am.Niccoli

  • 1 cup Cassava Flour (Certified Non-GMO) – Otto’s Naturals

Directions

  • Add all ingredients to the base of a high powered blender in the order given.
  • Whirl away until all ingredients are well combined, making sure that you scrap down the sides as needed.
  • Preheat your waffle iron and when it’s ready, pour ½ to ¾ cup of the batter into the iron. Cook for 4-5 minutes (times will vary depending on your waffle iron) or until the waffle is golden and no longer steaming. Remove the waffle and repeat with remaining batter.
  • like to preheat my oven to “warm” and place waffles on a baking rack set inside a baking sheet, so the cooked waffles stay warm as I use up the batter.
  • Serve with toppings of choice, butter (or ghee) and warm syrup
