RADICCHIO GNOCCHI - who knew a leafy veggie (technically chicory) could turn into gnocchi?! Me either & yet here it is! I’ve also added some cottage cheese for added protein. Little veggie infused pillows of yum!

I paired them with tender asparagus & tomatoes for a quick meal. Honestly, you could prep the gnocchi ahead of time so when it hits 5:00 you can get dinner on the table STAT!
