So we’ve noticed a trend on our little blog here…we have lots of mini donut recipes and with a few more in the works, we thought they could probably just use their own page! They are quite adorable…and the perfect little treat! They are all grain-free courtesy of Otto’s cassava flour… you’ve all ordered a bag or two for the holidays right? Many of them start with the same “vanilla/basic” batter and can simply be adapted with a few other ingredients to create so many tasty morsels! We use the Babycakes donut machine to make these, but all can be adapted to cook in a donut tray in the oven, just follow the manufacturer’s directions for the brand that you use.


basic donut batter

1 c Otto’s Cassava Flour
1 t baking powder
¼ t Redmond Real Salt
2 T coconut sugar
¼ c grass fed butter, softened
¼ c maple syrup
¾ full fat coconut milk
1 t vanilla
1 egg

Sift together cassava flour, baking powder and salt…in a separate bowl beat the coconut sugar and butter until fluffy…add syrup, coconut milk, vanilla and egg to the butter mixture & beat until well combined…combine dry ingredients with wet and beat again until well combined…you now have a very tasty, yet basic vanilla donut batter.
