This Key Lime Pie Mocktail (or make it a cocktail) is an oh so luscious and creamy drink that tastes so much like an actual slice of Key Lime Pie, you’re going to be amazed! Using crushed WAFFLE CONE GRANOLA along the edge of the glass, essentially the “crust” element, or what I like to call “crust dust” plus a generous sprinkle up on top is pure perfection. When I used the crushed granola as a crust in my FROZEN MANGO PASSION FRUIT MOUSSE, I knew there were going to be plenty of other ways to enjoy it!

I like to sip on this right from the glass since you then get a little bit of the “crust dust” in each sip and the texture it adds to this beverage is so delightful. You can serve with a straw, as pictured, but it’s worth giving that “sip” approach a try. Bet you love it too! If you’re needing a dairy free sweetened condensed milk, try this variety! I’ve used and really like but there are certainly so many choices available to pick from.
A word about making this a cocktail, I’ve not tried it but a guest at my home did ad some white rum and they said it was so great! The amount you use would depend a lot on personal preference and what you have on hand. If you give it a try, do let me know what you think!
Key Lime Pie Mocktail/Cocktail
Course: DrinksDifficulty: Easy6

minutesIngredients
- mocktail base
13 ½ oz coconut milk, full fat, unsweetened
¾ cup sweetened condensed milk, can sub dairy free as needed
¼ cup honey
3 whole limes, washed well, cut into ⅛’s
½ cup lime juice, key limes if you can find them
1 pinch am.Niccoli Vanilla Baking SALT – can sub standard salt
12 oz sparkling water, can sub rum
- “crust dust”/garnish
3 Tbsp Waffle Cone Granola with Nana Joes, finely ground up
zest of 1 lime
½ cup Whipped Cream, can sub dairy free as needed
Directions
- In the base of a high powered blender add the coconut milk, sweetened condensed milk and honey, blend until all the honey is incorporated and well combined.
- Toss in the cut up limes (yep, peel and all) and pulse 4-5 times at high speed. Place a fine mesh strainer over a large mixing bowl and pour contents through the strainer, pushing the mixture through the strainer with the back of a spatula or spoon. Discard leftover lime pulp/peel.
- Add the lime juice and salt to the mixture and whisk well to combine–taste and adjust as needed with additional lime juice and or salt. You should have about 3¾ cups of mocktail base! Pour this in a quart jar and place in the refrigerator to chill.
- To make the “rimming” for each glass, or what I like to call the “crust dust,” pulverize enough waffle cone granola to come up with about 3 tablespoons of fine crumbs. Add the zest of one lime to this and toss it together.
- Time to assemble and enjoy! I take a piece of lime and run it along the upper ¾ “ or so of the glass as well as the inside of the rim. Rather than roll the edge in the crumb mixture, which in my opinion doesn’t get the job done here, I like to sprinkle the “crust dust” mixture over the rim of the glass. Do this over the bowl of crust dust to catch any that doesn’t stick, rotating the glass to cover the entire edge. Repeat with all 4 glasses.
- Add ice to each glass, pour mocktail base to fill approximately ¾ of the way up (personal preference here) then top off with sparkling water* and stir a bit to combine. Add a dollop of whipped cream and as well as more “crust dust” – repeat with the remaining glasses then sip and enjoy!
Notes
- To turn this into a cocktail, sub white rum (or your favorite) for the sparkling water in whatever amount works for you.
