Paleo AVOCADO LIME SORBET! Another recipe that got cut from our NEW COOKBOOK coming your way! When we had to cut a few recipes, we were certainly sad. We couldn’t help but still share this one with everyone. This delicious frozen treat will become your new go to and you will not miss the dairy or refined sugar.

In the early years of our Paleo journey, making this was one our first ventures in dessert making. Making this non dairy frozen treat turned out great and gosh was it delicious! After many months of not having something cool to enjoy, it was a true delight! Our paleo avocado lime sorbet was an instant hit!

It was pretty dang good, but we knew that we could improve it, and we DID! The avocado provides the creaminess here and the lime juice a bright freshness. This makes it a light and delicious palette cleanser after a heavy meal. Dessert has to be good enough that you want to enjoy it after a full meal. We think this checks that box ten times over.

Most avocados conspire to be ripe at exactly the same time anyways. Why not make a luscious frozen treat sure to tickle those taste buds. One that will also satisfy your inherent desire to enjoy something frozen and dreamy.

Ingredients

  • 1 ½ cups (345 g) avocado purée (approx three avocados)

  • 1 ⅔ cups (360 ml) water

  • ¾ cup (180 ml) honey

  • ⅓ cup (61 g) maple sugar

  • ¼ cup (60 ml) fresh lime juice

  • ¼ tsp fine sea salt

Directions

  • Peel and pit avocados, then toss them into your food processor and blend until completely smooth. Remove from the processor and measure out 1 ½ (360 ml) cups and place back in the food processor bowl. Store any leftover purée for another use.
  • Add remaining ingredients to the avocado purée and process until completely smooth and creamy. Pour into a large bowl or container and refrigerate for at least four hours or overnight for best results.
  • If using an ice cream maker, proceed according to the manufacturer’s directions. Once complete, place in a freezer-safe container and store.
  • When ready to enjoy, serve as is or with fresh fruit.
