☀️ Happy FriYAY!! What. A. Day!! Here we are, the lone selfie we took today…and what a stunner right?! While Lake Powell may be shrinking, she still has so much beauty to share! 🏜

We paddled about 8 miles today seeing her sights & enjoying every single moment! Ok, we’ll except for the boaters who ignored the “no wake” signs & about knocked us off our boards 🙄
.
Other than that it was a lovely day & gosh we are so tired!! The WiFi here in our hotel is not the best, so stories aren’t loading well. I’ll keep trying as we got some amazing shots!
.
Along the way, we of course had zero cell coverage & we found our way so deep into a few canyons that we could only hear our paddles moving through the emerald green water. ZERO notifications, tweets, texts etc ☺️
.
It was spectacular & I highly recommended you unplug from the matrix for a day or two ~ #doit
.
Hopefully stories will load soon so I can show you how we keep lunch pretty simple while we’re out on the lake…it’s pretty compact & fits all snug in our dry bags.

🧡 our PUMPKIN CHOCOLATE CHIP MUFFINS are so grand we have two versions of it over on the blog! Both are equally tasty, but the 2.0 version is more refined & only uses one flour!
.
The original was the first muffin recipe to hit the blog almost 6 years ago & the 2.0 version was created about 2 years later. We enjoy them all year long, but gosh they seem even better tasting this time of year!

A variation of our Paleo Sandwich bread recipe that is super easy to make. If you want to sub pumpkin puree for the mashed potatoes called for in the recipe, do it! Works well and yes, they will have a slightly orange hue to them, but do not taste like pumpkin.

A round CHALLAH & it's so LEGIT! I used the @legitbreadcompany challah mix (it's so fun to create with) & once it was all stirred together I divided it in half & added some superfood powder to lend a splash of color. Also sprinkled some vanilla infused organic sugar on top before baking for a little sparkle.

You can see a bit of the process over on stories, a fun experiment that probably could have used more superfood powder to make the colors even brighter, fun nonetheless!

I had plans to make this round version of a challah loaf last week during Rosh Hashanah, but #jacktime decided otherwise! In our continued effort to learn more about other religions, the significance of a round challah this time of year is significant. It can symbolize God without beginning or end…similarly, round loaves are meant to bring a good life and blessings without end in the year ahead.

🧡 MINI ALMOND BUTTER PUMPKIN BUNDT CAKES made with almond butter & oh so dreamy delicious. If you don't have a mini bundt pan, you can also bake them up in a standard muffin tin. They will taste equally delicious, just won't have that pretty swirly top! Drizzle is optional, but gosh it’s tasty!

🍪 Cookies w/ lil' Jack! A most pleasurable day in the kitchen with one of my little grand kids…a Sunday afternoon well spent. 🥰 Jack just turned 2 & has been with us for the last week. What better time to get him in the kitchen & get comfortable, confident & learning about safety.

Kitchen time is a lost art & the more we can get our little ones in the kitchen having fun, enjoying themselves & feeling confident…the more they'll want to venture out & experiment as they grow up.
.
Four generations later & I can honestly say that not only do all our kids enjoy being in the kitchen, making the most delicious food, but so do all our grandkids. Do things take longer than expected when little ones help & is there far more mess to clean up after? You betcha! Are you making memories as well as teaching them a skill…ABSOLUTELY!
.
In a time when we can all use some extra smiles & happy moments…let's spend time together in the kitchen, it's a simple gift that keeps on giving! Besides, food is a language we all speak!

😎 OUR FAVORITE copycat CAFE RIO GRILLED CHICKEN SALAD & CREAMY TOMATILLO DRESSING! There's still plenty of warm days left to get your grill game on!

The chicken is marinated overnight for optimal flavor, whip up the dressing the next day, grill up that chicken, make some guacamole, pico de gallo & slice the greens. Dinner is DONE!

FUN FACT: the very first Cafe Rio was here in Utah! St. George to be exact & when the 2nd location arrived in Provo, back in the early 2000's, guess who saw them make their DRESSING! Yep, it was a spectacular moment & one taste buds everywhere are happy about!

These are made in a muffin tin & are so easy to put together. Slice up some potatoes, drizzle them with melted butter or ghee, add a few spices and/or herbs & layer them up with ham in your muffin tin. They're #comfortfood to the max over here!
