Ingredients

  • 2 tbsp butter, barely melted

  • 2 ½ tbsp brown sugar

  • 1 ½ tbsp granulated sugar

  • 1 egg yolk

  • 1 tbsp ube superfood powder

  • ½ tsp vanilla paste

  • ¼-½ tsp ube flavoring paste

  • ⅓ cup flour, sub your fav g/f flour 1:1 as needed

  • ⅛ tsp baking powder

  • ⅛ tsp cream of tartar, to keep the cookie from turning green as it bakes

  • Pinch of vanilla salt

  • 2-3 tbsp white chocolate chips

  • 1-2 tbsp macadamia nuts, roughly chopped, optional

  • Flaky sea salt

Directions

  • Preheat your oven to 350° and line a small baking sheet with parchment paper, set aside.
  • Stir together butter and both sugars until well combined with a small whisk in a bowl. Add the egg yolk, ube superfood powder, vanilla paste and ube flavoring/paste. With a small rubber spatula, whip until well combined. Careful with the ube paste, it can stain your hands and clothes!
  • Sprinkle the flour, baking powder, cream of tartar and salt on top of the wet ingredients, stir to combine well. Add white chips and macadamia nuts (if using) and stir to combine.
  • Divide dough into two equal portions* and place each dough ball on the prepared baking sheet about 2-3” apart. Place in the oven and bake for 12-14 minutes or until edges just begin to get slightly set.
  • Remove from the oven, immediately place a few more chocolate chips on top if desired to create more visual white pops of color and sprinkle with flaky salt. Allow to cool for 5-7 minutes to fully set, then grab that book and enjoy!

Notes

  • TO FREEZE: simply place muffins on a cooling rack in the freezer then once they’re individually frozen, place them in a freezer safe zipper bag. Store for up to 3 months. When ready to enjoy, remove from the freezer and allow to come to room temperature or microwave for around 35-40 secs.
  • For one large personal cookie, skip dividing and bake the full dough portion as one ball. Add 1–2 minutes to the bake time and keep an eye on the edges.
