Easter Rice Krispie Treats with mini eggs!

In another installment of “Michelle is clearly obsessed” I had to drop a fun recipe your way! This is one that I have no doubt my mom would have enjoyed. She LOVED Rice Krispie treats and when I say that they were always on hand when I was a child, they were literally always around! She had what I’d call a certified “sweet tooth.” I would often find bags of her favorite “Circus Peanuts” hidden away thinking my siblings and I wouldn’t find them! Oh the memories!

Cadbury mini eggs weren’t a thing that many decades ago, but I think these would have been a hit for her. She loved making the BEST fudge around the holidays, so chocolate was a favorite of hers. I like to think that pairing Rice Krispie treats, essentially making them Easter Rice Krispie Treats, with chocolate this way would have made her pretty happy. She’s been gone over 13 years, so this is an assumption on my part, but my sweet tooth came from her, so it’s a solid assumption as far as I’m concerned! Who knew a sweet tooth was hereditary?!

This time of year, you’ll often find me simply grabbing a few here and there to snack on. I made Cadbury Mini Egg Cookies last year and this year I’ve leaned into my enjoyment of these little eggs and knew I had to put them in Rice Krispies as well. Seemed like a tasty idea and it was indeed! The warmth of the melted marshmallows takes these tasty little eggs to next level enjoyment as far as I’m concerned! I know, I know…these little orbs are packed full of lots of sugar! But for a couple weeks out of entire year I’m going to nibble away. Not sure what kinda of Willy Wonka magic Cadbury has going on, but these are the golden ticket for me right now. My hope is that you and yours enjoy my version of Easter Rice Krispie Treats as much as I do!

Ingredients I use in my Easter Rice Krispie Treats

I found a new brand of organic rice cereal at my local Sprouts this year, such a fun find! It’s called The Real Cereal Company and they have both rice cereal and corn flakes–both are so good! There are several other brands of course, but wanted to mention the brand I am using most often. Of course pice your favorite cereal–gratefully there seem to be more and more organic options showing up on grocery store shelves these days.

Marshmallows! My favorite brand has sadly gone out of business, which always makes me sad. Small brands trying their best to make a difference in the foodie space is rough. Go with your gut on this ingredient and do what works best for you. While there are several name brands that work, read those labels and make an informed decision.

Are sprinkles required here, obviously not! Are they so fun though–most definitely and my grandkids always love a generous amount of sprinkles. The number of “better for you” in terms of color dye sprinkles nowadays is gaining a lot of momentum, which is so great. I’ve used the Watkins brand for many years and their rainbow variety with no artificial dyes is my fav, winning!

Ingredients

  • 3 tbsp butter

  • 10 oz marshmallows, reserve handful to fold in w/ eggs & sprinkles

  • 1 tsp vanilla

  • ⅛ tsp vanilla baking salt, can sub standard sea salt

  • 5 cups rice krispies cereal

  • ⅔ cup Cadbury mini eggs, slightly crushed

  • 2 tbsp rainbow sprinkles

Directions

  • Prepare an 8″x8″ inch baking pan by coating with butter or a little spritz of avocado oil, set aside.
  • Add the cereal to a large mixing bowl, set aside. Prepare/gather crushed mini eggs and sprinkles, set aside. I like to reserve a little bit of each of these so I can add them to the top.
  • In a medium sized saucepan, add butter and melt over medium low heat.
  • Once butter is melted add marshmallows (reserve a few if you want to stir them in when you add the eggs and sprinkles) and vanilla salt, then melt slowly over medium low heat, stirring constantly to avoid any browning on the bottom of the pan.
  • Pour this over the cereal, stirring to coat initially, then before the mixture cools too much add in the crushed mini eggs, sprinkles and reserved marshmallows. I like to use a large rubber spatula so I can scrape across the bottom of the bowl to incorporate all the mixins and melted marshmallows.
  • Transfer mixture to the prepared pan and press down slightly with a spatula or buttered fingers/palms to fill the pan. I try not to press down too tightly since I like my rice krispie treats to have some “give” to them. Top with reserved crushed mini eggs and sprinkles if desired.
  • Allow it to cool slightly (I like a little corner while they’re still slightly warm!) and firm up then slice and enjoy!
