If you are a Ted Lasso fan, you already know what’s coming this week!! Well, two things! I’m resharing my gluten free Ted Lasso Biscuits with the Boss and the long awaited new Season 4 is finally dropping! I am absolutely here for every single episode. Coach Lasso, the Lady Greyhounds, Rebecca, Roy, Keeley and the whole crew… I can hardly wait to see them all back together!
So of course I had to bring these Gluten Free Ted Lasso biscuits back for Season 4. These are made using cassava flour, so they’re gluten and grain free and are so buttery, crumbly, and honestly hard to stop eating. Whether you are hosting a watch party or just baking something fun to enjoy while you stream, these are the biscuits for the moment.
What Are “Biscuits with the Boss”?

In the show, Ted Lasso famously makes shortbread-style biscuits and brings them to his boss Rebecca every morning in a cute little pink box. They are simple, buttery British shortbread cookies that have become one of the most beloved recurring details in the series. I wanted to create a version for my gluten free friends without sacrificing any of that buttery magic.
The pink boxes of biscuits are one of the most iconic parts of Season one. That “Biscuits with the Boss” moment between Ted and Rebecca is iconic at this point, right?! The growth they’ve both gone through as well as the whole cast has my whole heart.
Why I Made These Gluten Free Ted Lasso Biscuits
I created this recipe back in 2023 when Season 3 dropped and it has been one of my favorite recipes ever since. I swapped in cassava flour for standard all purpose flour so anyone avoiding gluten can enjoy the same melt-in-your-mouth experience without missing a thing.
The Role Cassava Flour Plays
Cassava flour is one of my favorite gluten-free swaps because it behaves so similarly to all-purpose flour. It gives these biscuits that classic shortbread texture: slightly crisp on the outside, tender in the middle as well as such a similar taste to standard flour. A small amount of arrowroot flour helps bind everything together and keeps the texture just right.
Gluten Free Ted Lasso Biscuits with the Boss (Cassava Flour Shortbread)
Course: DessertDifficulty: Easy6

minutesIngredients
1 cup unsalted butter (can sub ghee for strict Paleo)
3/4 cup powdered sugar (can sub maple powdered sugar, though color & flavor will vary slightly)
1 1/2 cups Otto’s Naturals cassava flour
2 tablespoons arrowroot flour
1/4 teaspoon kosher salt
Directions
- Line an 8×8 inch baking pan with parchment paper and set aside.
- Add butter to the bowl of a stand mixer and beat until lighter in color and fluffy, about 4 to 5 minutes.
- Slowly add the powdered sugar, mixing until combined. Sift in the cassava flour, arrowroot, and salt, then mix until the dough comes together.
- Transfer to the prepared pan and press evenly into the bottom. Refrigerate for 30 minutes. Preheat your oven to 300°F while it chills.
- Bake for 50 to 60 minutes, or until golden but still soft to the touch. Remove from the oven and cool completely before cutting.
- Store at room temperature for up to a week. Fair warning: they will not last that long!
Notes
- Do not skip the chill time in the refrigerator. Thirty minutes makes a big difference in the final texture. And bake low and slow at 300°F. These are not a recipe that want high heat.
Paleo Option
If you need these strict Paleo, simply swap the butter for ghee and use maple powdered sugar in place of regular. The texture and flavor will be a bit different, so I suggest trying a half batch baked in a loaf pan first. Ingredients are not cheap so no need to waste ingredients unnecessarily.
How to Store These Biscuits
Store in an airtight container at room temperature for up to a week. They also freeze beautifully if you want to make them ahead for a watch party.
