Golden brown on the outside, fluffy on the inside! Fire up that grill – hamburgers, sloppy joes, pulled pork, or grilled fish never had it so good! These fluffy gluten free hamburger buns do not disappoint! A fantastic variation of my original Gluten Free Dinner Roll recipe that proves gluten-free baking can be just as satisfying and delicious as the real thing.
Why These Gluten Free Hamburger Buns Are a Game Changer
If you have ever taken a bite of a gluten free bun that fell apart before you even made it to the table, you know the struggle is real. Never fear my friend, these are different, trust me! Built on the same foundational Gluten Free Dinner Roll dough that has been the base for so many new favorites! These buns bake up perfectly golden brown, with a fun sprinkle of sesame seeds for that classic “hamburger bun” look. They also hold their shape, and have enough structure to stand up to a loaded burger without going soggy. Fire up that grill, you are so ready.
The Dough That Does It All
My Gluten Free Dinner Roll recipe has become one of the most versatile doughs I have ever worked with. What started as a Thanksgiving roll for a dear friend’s son newly diagnosed with Celiac Disease has since become these hamburger buns, sandwich bread, French bread, pretzels, and so much more. If you learn one gluten free dough, this is the one.
The Secret Ingredient in my Gluten Free Hamburger Buns
Yes, mashed potatoes right in the dough. That half cup is what gives these buns their soft, pillowy interior and keeps them from drying out the way so many gluten free breads do. Day-old mashed potatoes work beautifully, since their starch structure transforms overnight in the fridge! So this is a great recipe to make when you have leftovers on hand. Need a nightshade free version? Mashed sweet potatoes work too, just plan to add a few extra tablespoons of flour to get the dough consistency right.

Choosing Your Gluten Free Flour
I have tested this dough with three different blends and they all work, but my top pick is Caputo Fioreglut gluten free flour. It gives you the closest thing to a traditional bun – a slightly chewy, golden crust with a soft center. King Arthur Measure for Measure and Bob’s Red Mill 1:1 are both solid options as well. Whatever you reach for, the dough should feel soft, pliable, and not sticky before shaping.
Tips for Shaping, Baking, and Storing
How to Get That Deep Golden Brown Finish
Don’t skip the egg wash. A good brush over the top of each bun right before they go into the oven is what gives you that gorgeous color and the slightly crisp outer shell. For that classic hamburger bun finish, sprinkle a few sesame seeds up on top right after the egg wash and then you’re good to go. Bake at 350°F for 25 to 30 minutes until deeply golden just getting a dark hue around the edges.
Make-Ahead and Freezer Tips
These buns freeze beautifully. Slice them before freezing so you can pull out exactly what you need and go straight from freezer to toaster or pan. A quick toast before serving gives you the best texture every time.
What to Load These Gluten Free Hamburger Buns With
The obvious answer is a classic burger, and yes, these nail it. But do not stop there. Sloppy joes, pulled pork, grilled chicken, a fried fish sandwich – these buns can handle all of it. They are sturdy enough for the messiest fillings and soft enough to make every bite worth it.
