Open Faced Green Chili Burritos (The Best Leftover Meal Ever)

If you’ve made my Green Chili Burritos, you already know that the leftovers are just as exciting as the meal itself. But this right here – the Open Faced Green Chili Burrito – is my absolute favorite way to use up every last bit of that green chili. This was my mom’s trick too, and she had an uncanny ability to make leftovers feel like an entirely new and special meal. That gift did not skip a generation — I am happy to say I picked it up in full.

The beauty of this recipe is in its simplicity. Everything goes in straight from the refrigerator: the tortilla, the leftover green chili, the refried beans, the cheese — and the oven does all the heavy lifting. In less than minutes, you have something with golden, crispy edges, bubbling melted cheese, and that gorgeous green chili sauce layered over the beans and tortilla. It is the definition of pure comfort. Those crispy edges are truly my favorite part and if I’m being honest, I eat those crispy edges first! That way if I can’t eat the whole thing, I’ve enjoyed my favorite part.

Why This Works So Well as a Leftover Meal

Pressing the tortilla into the bottom and up the sides of a pie plate is the genius move here — it cradles all that green chili goodness while the edges get golden and crispy in the oven. The oven heat warms everything through beautifully without drying anything out, and the cheese gets that perfect bubbling, slightly golden top that is just irresistible. It’s so much better than reheating a burrito in the microwave — not even close.

It also comes together in just a few minutes of hands-on time, which makes it perfect for a weeknight dinner when you’ve enjoyed Green Chili Burritos earlier in the week.

What You’ll Need

This recipe is built entirely around leftovers from the Green Chili Burritos recipe, so you’ll need to have made that first! You will need my sourdough flour tortillas, leftover green chili, refried beans, shredded cheddar cheese, and toppings of choice, like green onions if you’d like. From there, pile on whatever garnishes make you happy — sour cream, pico de gallo, guacamole, hot sauce, a squeeze of fresh lime. Get creative, that’s the whole spirit of this meal.

How to Make Open Faced Green Chili Burritos

Preheat your oven to 400°F degrees. Take a large flour tortilla and press it into the bottom of a pie plate or shallow baking dish, pressing the edges up along the sides so they will get nice and crispy. Spread refried beans over the tortilla, then spoon the leftover green chili generously on top and sprinkle a good layer of cheddar cheese over everything along with some sliced green onions.

Bake for twelve or so minutes until the edges are golden and crispy and the cheese is fully melted and bubbling. Every oven is a little different so start checking at twelve minutes. Remove from the oven and let cool for just a minute or two before serving directly from the pie plate or carefully sliding onto a large plate. Top with all your favorite garnishes and dig in while it is hot.

Tips and Variations

Try open faced green chili burritos in the air fryer

If you have an air fryer similar to my Cuisinart model, it works beautifully at 400°F degrees for five to seven minutes. You get those crispy edges even faster and the cheese gets perfectly melty. This is my go-to method when I’m making a quick dinner for my husband and I.

Or try the broiler

The broiler is another great option for getting that bubbly, golden cheese top quickly. Just keep a very close eye on it — things go from perfect to burned faster than you’d think under the broiler. Stay nearby and pull it the moment the cheese is golden and gorgeous.

Make it your own

The garnishes are where you can really make this feel special and fresh each time. A big scoop of guacamole, some freshly made pico de gallo, a drizzle of hot sauce, pickled jalapeños, sliced avocado — all of it works beautifully with the flavors of the green chili. Have fun with it and make each one your own.

Ingredients

  • open faced burrito
  • 2 whole Sourdough Flour Tortillas, I use my 10″ variety here, perfect for the pie plate

  • 1/2 cup Refried Pinto Beans

  • 3/4 – 1 cup Cheddar Cheese, shredded, or more as desired

  • 2 – 3 Tbsp Green Onion (Scallion), thinly sliced, plus additional for garnish if desired

  • optional garnishes
  • 3/4 – 1 cup Lettuce, Iceberg, shredded

  • 1/4 cup Red Cabbage, thinly sliced

  • 2 – 3 Tbsp Cotija Cheese, crumbled

  • 2 – 3 Tbsp Salsa – your favorite variety

  • 2 – 3 Tbsp Cilantro, finely chopped

Directions

  • Preheat your oven to 400°.
  • Place the tortillas in the bottom of a two pie plates or other shallow baking dish, pressing into the bottom so the edges of the tortillas are coming up along the sides. You want this to happen for those crispy edges!
  • Spoon and spread half of the beans onto each tortilla, followed up by half of the green chili that you will also spread evenly on top of the beans. Sprinkle half of the cheddar cheese on top as well as some of the green onions if desired and even some sour cream if that’s your jam.
  • Place in the preheated oven and warm/bake until edges are golden and crispy and toppings/cheese are bubbly, can take anywhere from 12-20 minutes depending on your oven, see note below for Air Fryer tips.
  • Remove from the oven and either allow to cool slightly before serving directly from the pie plate or carefully remove to a large plate. Top with garnishes, as desired, sprinkling half of each of them on top of each and enjoy!

Notes

  • I like to cook mine in my AIR FRYER, which typically takes about 5-7 minutes at 385° – traditional oven times typically do take a little longer. You can also try warming under your broiler, just keep an eye on them as they will go from “ready to enjoy” to “burnt” very quickly that way.
