Taco Bell Mexican Pizza Copycat (Better Than the Original)

Let me be honest with you about something: the Taco Bell Mexican Pizza is not really a pizza. It never was. It is more of a double decker tostada situation — two crispy tortillas sandwiching a bean layer (btw, I never liked it with the meat layer, but feel free to add it as desired) with sauce and cheese on top and all the toppings you love. And that is precisely why I have adored it since childhood. It is fun, it is nostalgic, it is a little absurd in the best possible way, and it is absolutely delicious. I have been wanting to make my own version for years and this one does not disappoint.
This Taco Bell Mexican Pizza copycat comes together in under twenty minutes, especially if you have my Sourdough Flour Tortillas already made. Siete Foods does a lot of the heavy lifting here with their Vegan Refried Pinto Beans, Charro Beans, and Red Enchilada Sauce are pantry staples in my kitchen and they make this recipe both deeply flavorful and incredibly easy to pull together on a weeknight. The result is something that scratches that exact nostalgic Taco Bell itch while being made entirely from ingredients you can feel good about.
What Makes This Copycat So Good
The original Mexican Pizza was a cult favorite for decades. Taco Bell even brought it back after discontinuing it due to fan outcry, which tells you everything you need to know. What people love about it is the combination of textures: that satisfying crunch of the toasted tortilla, the creamy bean layer, the savory meat or bean filling, the warm enchilada sauce pooling over the top, and the melty cheese and fresh toppings finishing it all off. Every bite has something going on and it is completely impossible to eat just one.
My copy cat Taco Bell Mexican Pizza stays true to all of that while using better for you ingredients throughout. The sourdough tortillas toast up beautifully in the air fryer with just a spritz of avocado oil so you get that perfect crunch without deep frying. The Siete Foods bean combo adds a depth of flavor that the original honestly cannot touch. And the toppings are entirely yours to customize.
Ingredients You’ll Need
Here is a quick look at what goes into these. Full amounts are in the recipe card below.
The Tortillas
Eight, six-inch sourdough flour tortillas — two per pizza. These get spritzed with avocado oil and toasted until perfectly crispy. The sourdough base adds a flavor dimension that store-bought tortillas just do not have, and the slightly thicker texture holds up beautifully to all the toppings without getting soggy.
The Bean Layer
Siete Foods Vegan Refried Pinto Beans and Vegan Charro Beans combined make an absolutely scrumptious, deeply flavored bean filling that spreads perfectly and stays put between the two tortilla layers. Warming them together until they are a smooth, spreadable consistency is transformative. Of course use your favorite brands of bean here, totally your choice.
The Sauce and Cheese
Siete Foods Red Enchilada Sauce heated until just bubbly gets spooned generously over the top tortilla. Grated white cheddar cheese goes on right after — the warm sauce helps it melt beautifully. This is the moment everything comes together and it smells absolutely incredible.
The Toppings
Sliced black olives, diced Roma tomato, crumbled cotija cheese, and sliced green onions are my go-to combination — a nod to the original with a little extra freshness. This is entirely customizable so load up whatever you love most.
How to make my copycat Taco Bell Mexican Pizza
Start by prepping all your toppings so everything is ready to go when assembly time comes. The assembly moves fast and you want warm beans and sauce at the ready. Combine the Siete refried beans and charro beans in a small saucepan over medium-low heat, stirring until fully combined and heated to a smooth, spreadable consistency. In a separate small pan, warm the enchilada sauce until just bubbly. Remove both from heat and keep warm.

Spritz both sides of each tortilla lightly with avocado oil. Toast in the air fryer at 375°F degrees for three to four minutes until golden and crispy. If you do not have an air fryer, broiling works great too — just flip them once and keep a close eye so they do not burn. You want them genuinely crispy so they hold up to all the layers.
To assemble: place one toasted tortilla on a plate. Spread three to four tablespoons of the warm bean mixture evenly all the way to the edges. Sprinkle grated white cheddar over the beans, then place the second toasted tortilla on top. Spoon the warm enchilada sauce generously over the top, then add more cheese and all your toppings. Serve immediately while everything is still warm — and have napkins ready. This is a joyful, slightly messy meal and that is exactly the point.
Tips for the Best copy cat Taco Bell Mexican Pizza
Get your tortillas genuinely crispy
The crunch is everything in this recipe — if the tortillas are at all soft or pliable they will not hold up to the bean layer and toppings and the whole thing will fall apart. Give them the full time in the air fryer and do not rush it. Crispy tortillas = happy Mexican Pizza.
Work quickly at assembly
Have everything ready before you start assembling. The beans and sauce should be warm, the toppings should be prepped, and the tortillas should come straight from the air fryer to the plate. This is a serve-immediately kind of meal and it is best when everything is hot and fresh.
The air fryer is your best friend here
Three to four minutes at 375°F degrees gives you perfectly golden, evenly crispy tortillas with minimal oil. It is faster and more consistent than the broiler and gives you both hands free to prep the rest of the ingredients while the tortillas toast. Highly recommend if you have one.
Customize your toppings freely
The original had diced tomatoes, shredded cheese, sliced green onions, and black olives. My version keeps that spirit but leans into cotija cheese for a more authentic finish. You can go in any direction you like — sliced jalapeños, diced avocado, a drizzle of crema, pickled red onions — all of it works beautifully here.

Ingredients
8 whole Sourdough Flour Tortillas, the 6″ variety vs the 10″
1 – 2 Tbsp Avocado Oil Spray, little spritz for each tortilla
1/2 – 1 cup Vegan Refried Pinto Beans – Siete Foods
1/2 – 1 cup Vegan Charro Beans – Siete Foods
1/4 – .33 cup Red Enchilada Sauce – Siete Foods
- toppings
White Cheddar Cheese, grated
Black Olives, sliced
Roma Tomato, diced
Cotija Cheese, crumbled
Green Onion (Scallion), sliced
Directions
- Begin by prepping your toppings of choice, then set aside.
- Combine the refried beans and charro beans in a small saucepan and warm over medium low heat, stirring occasionally until fully combined and heated through so that it’s a nice spreadable consistency. In a small saucepan, heat up the enchilada sauce til just bubbly, remove both pans from the heat and set aside.
- Prepare tortillas by giving them each a quick spritz of avocado oil then brushing to evenly coat both sides. I toast mine in my air fryer but you could also broil them in your oven, turning to toast both sides as desired.
- Time to assemble and eat! If beans and sauce are not still warm, quickly place back on the heat to warm. Place one toasted tortilla on a plate, spread about 3-4 tablespoons of beans evenly over the top to the edges, top with a bit of grated cheese then top with another tortilla. Spoon warm enchilada sauce over the top. Garnish with additional cheese and toppings as desired. Repeat with remaining tortillas, beans, sauce and toppings.
- Serve and enjoy immediately! I like to cut mine into quarters, but you can certainly dive in without cutting them.
