CANDIED POPCORN - last month I made bags & bags of candied popcorn for my niece’s book launch party. I coordinated the colors to match her book cover & everyone loved it so much. . After sharing about it on stories, so many of you wanted the recipe, so here it is! While it’s in NO WAY PALEO, it sure is fun for a special occasion & a warm fuzzy for our family. This recipe is a throw back to the “Jello popcorn balls” my mom used to make for me, albeit less sticky since the bake time in the oven lends a crisp texture. . This pink variation is watermelon flavored & has a boost of fabulous color from prickly pear powder. 🩷 I have directions for a deep dark purple as well as a gorgeous lavender color over on the post that are grape flavored & use purple sweet potato powder & activated charcoal for spectacular color. 💜 . Paleo DATE DREAMS - I was organizing some old recipe cards & stumbled on a recipe shared with me by a family friend who is no longer with us. I immediately knew I could remake these & wanted to share the yumminess with you! Happy FriYAY & be sure to check out the recipe below! . ½ lb dates, pitted & roughly chopped 1 cup mini marshmallows 1¼ cup sweet thins, broken apart 6 tbsp coconut condensed milk* ½ cup pecans, roughly chopped 1 tsp vanilla Pinch of salt ½ - 1 cup shredded coconut, unsweetened . • pulse dates & marshmallows in food processor til well combined, mixture will be very sticky • toss in cookies, condensed coconut milk, pecans, vanilla & salt, pulse again to fully combine, mixture should be less sticky • scoop by tsp-full & roll into balls (should get around 32-36) • roll in coconut or desired coating • enjoy right away or store in an airtight container for up to a week • they will firm up as they set . *as with many canned coconut milk products, the contents can separate…no worries, the brand I used is best emptied from the can, whisked to fully re-combine & refrigerated a bit before using in this recipe, flavor is amazing! https://foodsocial.io/user/324898/recipes/#myuploads @jooliesdates @simplemills @mementa.inc @sweet.apricity #dates #paleo #dairyfree #vegan #eatdelicious #fingerfood #recipebelow #easyrecipe #schoolsnack #glutenfree #sweetapricity #backporchpaleo
