Why you’re gonna LOVE this!

My take on a refreshing cucumber salad that pairs so perfectly with my Salmon Bites! It’s the perfect warm weather side dish my friends. You can adjust the kiss of heat to your liking by using more or less of the chili flakes. But maybe just try a little bit of a sprinkle! Promise that the contrast of the cool cucumber with a bit of heat is magical! Am I a bit late to the cucumber game…probably, but happy to be playing now!

Tips for optimal enjoyment

I prefer my cucumber salad on the crisper side. So if I’m making this for a dinner or brunch, I prep all the elements and then toss together about 30 minutes before I’m going to serve it. This is a personal preference, but it’s something I’ve found serves me well. It’s actually an amazing side dish you can serve with just about any meal. Maybe you don’t mind a bit of a softer cucumber, if so feel free to make ahead and store in the refrigerator until you’re ready to serve.

Refreshing Cucumber Salad

Ingredients

  • 7 – 8 whole Persian Cucumber

  • 1/2 whole Red Onion, cut into ¼ “ slices

  • 1/2 – 1 tsp sea salt

  • dressing
  • 1/2 cup Rice Wine Vinegar

  • 2 1/2 Tbsp Honey, omit for Whole30 as needed

  • 4 tsp Toasted Sesame Oil

  • 4 tsp Soy Sauce, can sub coconut aminos

  • 3 – 4 tsp salt salt, to taste

  • 2 tsp Organic Red Pepper Flakes

  • garnish
  • 2 Tbsp Cilantro, roughly chopped

  • 1 – 2 Tbsp Sesame Seeds

  • 1 – 2 Tbsp Chives, finely chopped

Directions

  • Wash cucumbers and pat dry. Use the tines of a fork to score the skin of each cucumber from tip to tip, all the way around, then slice into ¼“ discs. Place discs in a colander and sprinkle with salt, toss and allow to set for 5-10 minutes to draw out excess water.
  • While cucumbers set, make the dressing by adding all ingredients to a small bowl and whisking well to combine.
  • Add cucumbers and red onions to a medium sized bowl, pour dressing on top and toss to fully coat and allow to set for 5-10 minutes.
  • Toss again and place in a serving bowl, garnish with cilantro, chives and sesame seeds
