This recipe is a personal one. My angel mom’s rice krispie treats were a family favorite. She always had ingredients on hand to make them. Always made with love and simplicity-literally the best comfort food. I carry that tradition in every batch I make.
So when I started dreaming up new ways to use my WAFFLE CONE GRANOLA: the collaboration with the incredible Nana Joe’s Granola that I’m still pinching myself over, this recipe felt had to happen. Crushed waffle cone granola, pieces of actual waffle cone, freeze-dried vanilla ice cream, and a generous shower of rainbow sprinkles, all stirred up with buttery, gooey marshmallow and rice cereal. Yep. It’s as delicious as it sounds.
No-bake. Gluten-free. Ready in about 20 minutes. And absolutely impossible to eat just one piece.

What Makes Ice Cream Rice Krispies Different from Every Other Rice Krispie Treat
Classic rice krispie treats are wonderful since what’s not to love about the combo of butter, marshmallow and crispy cereal? But these, these have layers of flavor and texture that take them somewhere else entirely.
Waffle Cone Granola

Ice Cream Rice Krispie Treats
Ingredients

- ¼ – ⅓ cup Waffle Cone Granola crushed into bite sized pieces
- ¼ – ⅓ cup PREMIUM Freeze Dried Ice Cream Vanilla – Arctic Farms, cut into bit sized pieces
- ¼ – ⅓ cup Paleo Waffle Cones broken into pieces
- 2 Tbsp Rainbow Sprinkles

- 3 Tbsp Butter Salted
- 10 oz Mini Marshmallows your favorite variety
- 1 tsp Pure Vanilla Extract
- 1 pinch Vanilla Baking SALT – am.Niccoli can sub standard sea salt
- 5 cup Rice Krispies Cereal your favorite brand
Instructions
- Prepare an 8″x8″ inch baking pan by coating with butter or a little spritz of avocado oil, set aside.
- Add the cereal to a large mixing bowl, set aside. Prepare all the mix-ins and add to the cereal and toss to mix. I like to reserve a little bit of each mix-in so I can add them to the top.
- In a medium sized saucepan, add butter and melt over medium low heat.
- Once butter is melted add marshmallows and vanilla salt, then melt slowly over medium low heat, stirring constantly to avoid any browning on the bottom of the pan.
- Pour this over the cereal and mixins, stirring quickly to coat. I like to use a large rubber spatula so I can scrap across the bottom of the bowl to incorporate all the smaller mixins and melted marshmallow.
- Transfer mixture to the prepared pan and press down slightly with a spatula or buttered fingers/palms to fill the pan. I try not to press down to tightly since I like my rice krispie treats to have some “give” to them.
- Top with reserved granola and waffle cone pieces as well as freeze dried ice cream and sprinkles.
- Allow it to cool and firm up then slice and enjoy!
Tips for the Best Ice Cream Rice Krispie Treats
- Low and slow on the marshmallows. Rushing the melt over high heat leads to tough, dense treats. Medium-low heat and constant stirring is the secret to that perfect chewy texture.
- Reserve some mix-ins for the top. Setting aside a little of each mix-in to press into the top makes these look as incredible as they taste — and ensures every slice has those visual wow-factor toppings.
- Don’t over-press. A gentle press into the pan keeps the treats light and chewy. Pack them in too hard and they’ll be dense and hard.
- Add toppings while warm. The freeze-dried ice cream and waffle cone pieces adhere best when the treats are still slightly warm and tacky. Don’t wait too long!
- Butter your hands. Lightly buttered palms make pressing the mixture into the pan so much easier and less sticky.
Storage
Store in an airtight container at room temperature for up to 3 days. These are best enjoyed the day they’re made when the mix-ins are at their crunchiest. But to be honest, they rarely last that long!

Can I double the recipe?
Yes! Double all ingredients and use a 9″x13″ pan. You’ll want a larger pot for the marshmallow melt. Keep in mind the treats may be slightly thinner in the larger pan.
