My stunning Ube Boba Milk is made with ube and boba, obviously. There are several boba brands out there and I’ve used Better Boba in this recipe. I’ve also used Maizly corn milk, which is naturally dairy free, a few splashes of Portland Syrups Ube syrup and my Ube Superfood Powder. I added a fun garnish of frothed Organic Valley French Vanilla Creamer (which is lactose free btw) with a sprinkle of ube dusted pearl sugar. What can I say, I love adding or sprinkling a fun garnish to most drinks, muffins, entrees or even scrambled eggs.
What Is Ube and Why Is Everyone Obsessed?
If you’re new to ube, welcome to the PURPLE PARTY! You’re going to love it here! Ube (pronounced oo-bay) is a purple yam native to the Philippines with a flavor that lands somewhere between vanilla, toasted hazelnut and white chocolate. It’s earthy, gently sweet and has one of the most stunning natural colors you’ll ever cook with.
The benefits of anthocyanins cannot be overlooked either, a fun drink that also has added benefits… even better! Anthocyanins are known for heart healthy benefits and call health and they are what make this purple yam so vibrant the same way it does in purple cabbage, red onions (we all know they’re actually purple), grapes and even black beans.
I’m all in for food and beverages being not only tasty but fun to make and enjoy, and this ube boba milk hits those buttons. I remember the first time I tried a boba drink, maybe you do as well? It’s such a unique experience, isn’t it? Boba are tiny little spheres made from the cassava root, so they’re naturally gluten free, and they add so much fun to not only milks and teas but cocktails and desserts as well.
Why You’ll Love This Ube Boba Milk
This ube boba milk recipe is genuinely one of the most fun drinks I’ve put together and once you make it, I think you’ll feel the same way. Here’s why it earns a permanent spot in the drink rotation:
It skips the tea entirely and leans into a creamy, milk-based base instead. Which means no bitterness, just smooth, gorgeous purple flavor. The combination of my Ube Superfood Powder and Portland Syrups ube syrup gives this drink a bold, layered ube flavor that really sings. Maizly corn milk adds a natural sweetness and creaminess that pairs beautifully with the ube, plus it’s completely dairy free. And that optional garnish? Frothed vanilla creamer with pearl sugar dusted in ube powder is the kind of finishing touch that makes this feel like something you’d pay way too much for at a trendy cafe, but you made it right at home.
How to Make Ube Boba Milk
This comes together quickly and the method is simple once you know the steps. No special equipment needed, just a small bowl, a whisk and your favorite glass!
Step 1: Prep Your Boba
Add your cooked and cooled boba to a glass that’s large enough to hold your full drink. Pour the ube syrup directly over the boba and give it a stir with a boba straw or spoon so the boba gets well coated in that gorgeous syrup.
Step 2: Build the Drink
Add your ice on top of the boba, then pour in your Maizly corn milk (or whatever milk you’re using).
Step 3: Mix the Ube Powder
In a small bowl, whisk your Ube Superfood Powder with the 3 tablespoons of water until fully combined and smooth, then pour that mixture right over the top of the milk in your glass.
Step 4: Add the Garnish (Optional but Highly Recommended!)
If you’re garnishing, froth your vanilla creamer and spoon it gently on top. Then sprinkle your pearl sugar that’s been dusted with a little ube powder right over that frothed cream. Grab your boba straw, give the whole glass a good stir (there may be a little spillage down the side, just embrace it!) and sip away!
Tips for the Best Ube Boba Milk
A few things I’ve learned making this drink that are worth passing along:
- Use pre-cooked boba pearls if you can find them. They save a ton of time and most brands are really good. I love Better Boba for convenience and texture.
- Whisk your ube powder with water first before adding it to the drink. This blooms the powder and prevents any clumping in your milk, giving you a smooth, evenly purple drink every time.
- The ube syrup over the boba at the bottom is what gives this drink its layered, gorgeous look before you stir, so don’t skip that step if you want that beautiful visual effect.
- Adjust your milk amount based on how strong you want the ube flavor to come through. Start with 3/4 cup and add more from there.
- If you want to get really fancy with that garnish, a handheld milk frother takes your vanilla creamer to the next level in about 30 seconds flat. Totally worth it.
