Apple Crème Brûlée (Gluten Free + Dairy Free Option)

If there’s one dessert that makes a dinner party table feel truly special without asking you to spend your whole day in the kitchen, it’s a crème brûlée. And if there’s one time of year that calls for a seasonal twist on that classic, it’s fall. My Apple Crème Brûlée is exactly that, a luscious, silky custard with a little kiss of fall baked right in, courtesy of my Caramel Apple Simple Syrup and a generous pinch of Primal Palate Apple Pie Spice. The result is elegant, deeply flavored, and honestly one of the recipes I am most proud of.

The best part? You can make these apple creme brûlées a full day ahead, refrigerate them overnight, and all that’s left to do before serving is that satisfying torch-and-crack moment with the sugar topping. That little caramelized brûlée shell is everything and it makes these look like something you’d order at a very fancy restaurant. Guess what though, the ingredient list is simple, the process is approachable once you know a couple of key tips, and nobody at that table needs to know how easy it actually was!

Why This Apple Crème Brûlée is So Scrumptious

The secret to these apple creme brûlée is the Caramel Apple Simple Syrup. Instead of using heavy cream as the liquid base the way a classic brûlée does, I use Maizly corn milk warmed with the simple syrup right in the saucepan. That syrup is already infused with granny smith apple, brown sugar, and warm spice, so it brings a deep caramel apple flavor into every single bite of the custard. The apple pie spice adds another layer of warmth and the am.Niccoli vanilla baking salt rounds everything out beautifully. It’s gluten free as written and dairy free since Maizly corn milk does all the heavy lifting in place of heavy cream.

Ingredients You’ll Need

For the Apple Creme Brûlée Base

Six room temperature egg yolks, granulated white sugar, Maizly corn milk, one third cup of my Caramel Apple Simple Syrup, Primal Palate Apple Pie Spice, and am.Niccoli vanilla baking salt. That’s your entire custard right there. Save those egg whites for another use. I love using leftover egg whites to make a quick meringue!

For the Brûlée Topping

Granulated white sugar and a pinch more apple pie spice combined in a small bowl. Sprinkle about one tablespoon evenly over each baked and chilled apple creme brûlée right before you torch it. That spiced sugar caramelizes into the most gorgeous amber shell and the little apple pie spice notes that come through when you crack it? Simply perfection.

For the Optional Garnish

Eight thin slices of Fuji apple and fresh mint leaves. If you really want to make a moment of it, use your kitchen torch to quickly brûlée the apple slices too before placing them on top. That little caramelized apple garnish is absolutely the chef’s kiss and makes these look like something truly special on the table.

How to Make Apple Crème Brûlée

Preheat your oven to 325°F degrees and place four 4-ounce ramekins in a shallow baking dish. Set aside while you make the custard.

Whip the egg yolks and sugar together until the mixture becomes pale and slightly thick, an important step because it helps the custard set up with that beautiful silky texture. In a small saucepan, warm the corn milk, simple syrup, apple pie spice, and salt over low heat until just simmering, then remove from the heat.

Here’s the most important step: tempering the eggs. In a very thin, slow stream, drizzle the warm milk mixture into the egg yolks while whisking constantly. We do not want scrambled eggs in our brûlée, and rushing this step is how that happens! Take your time, keep whisking, and you’ll have a perfectly smooth custard to work with.

Pour approximately half a cup of the custard into each ramekin. Add boiling water to the baking dish until it reaches halfway up the sides of the ramekins. This water bath is what gives crème brûlée its signature silky texture and even bake. Carefully transfer to the oven and bake until the filling is set but still slightly wobbly in the center, about 55 to 65 minutes.

Remove from the oven and water bath, cool to room temperature on a rack, then cover with plastic and refrigerate on a tea towel lined baking sheet (keeps those little ramekins from moving around on the sheet) overnight for optimal results. When you’re ready to serve, combine the sugar and apple pie spice, sprinkle about one tablespoon evenly over each custard, and brûlée with a kitchen torch or under your broiler. Add the apple and mint garnish if using and serve immediately. That’s it…Fall elegance in a ramekin!

Tips for the Best Apple Crème Brûlée

Temper those eggs slowly. This is the most important tip in any crème brûlée recipe. Drizzle the warm milk mixture into the egg yolks in the thinnest possible stream while whisking constantly. Too fast and you’ll scramble the eggs. Patience here is everything!

Don’t skip the water bath. The bain-marie (that boiling water surrounding the ramekins in the pan) is what gives crème brûlée its signature silky, luscious texture. It insulates the custard from the direct oven heat so it cooks gently and evenly. No shortcuts here!

Refrigerate overnight for best results. The custard needs a full chill to set up properly and the flavor actually deepens beautifully overnight. This also makes it the perfect make-ahead dessert. Everything is done the night before and there’s barely any work at serving time!

The center should still have a slight wobble when you pull them. A set crème brûlée will still jiggle slightly in the center like a barely set Jello. If it’s completely firm it’s overbaked and the texture will be grainy rather than silky. When in doubt, pull them a few minutes early, they’ll continue to set as they cool.

Make Ahead and Serving Notes

This recipe was genuinely made for entertaining. Bake the custards the day before your dinner party, refrigerate overnight, and the next day all you need is 5 minutes to add the sugar and torch the tops. Serve immediately after brûléeing since the caramelized sugar shell will start to soften within about 20 minutes. Don’t brûlée until you’re ready to eat!

If using the apple garnish, place two slices on top and quickly brûlée those as well. Add mint leaves as desired. Serve immediately.
